A "pied-noir" recipe from North Africa. The "Pieds Noirs" were the long established people of European origin in North Africa . Under this combined mediterranean influence, a magnificent culinary culture flourished in the mid nineteenth century on the Northern coast of Africa.
Marinated anchovies can be enjoyed with Pastis or Anisette. You may also try an Alsace rosé wine or a Moroccan Gris. |

Raspberry meringues will be best appreciated with a champagne, a cremant.
Raspberry sauce: Blend or process raspberries until smooth, strain. Combine rasbperry puree with blended cornflour and water in pan, stir over heat until sauce boils and thickens. Optionally, you may want to add a teaspoon of raspberry liqueur.
White cocolate sauce: Combine chocolate and cream in bowl, beat with wooden spoon until smooth. |

Can be made 3 days in advance and stored, covered in a freezer. This ice cream could be accompanied by a Calvados and some almond biscuits. |

This recipe is best made just before serving. Freezing is not suitable. Enjoy this dessert with a small liqueur glass of strawberry cream for example. |

The carrot dip can be made a day ahead. Vegetables are best prepared just before serving. Keep the dip, covered in a refrigerator. Do not freeze. Enjoy the carrot dip with a cocktail, a tequila based cocktail such as a Margarita for example. |
